Roast Crabapple Bison

Ingredients »

  • 5-6 lbs Buffalo roast, boneless
  • ½ tsp salt
  • 1 tsp pepper
  • 1 garlic clove, crushed

Marinade:

  • ½ cup orange juice
  • 2 T. lemon juice
  • ½ tsp all spice

Glaze:

  • 2 T. melted butter
  • 2 T. orange juice
  • ¼ cup crabapple jelly

Directions »

Season roast with salt, pepper and garlic. Tie roast with cooking twine and place in covered baking dish. Roast in preheated oven at 275 degrees for 1 to ½ hours.

Combine ¼ cup orange juice, lemon juice, and allspice to form marinade and baste meat frequently.

To make the glaze, mix melted butter, orange juice, and crabapple jelly in bowl. 30 minutes before roast is done, uncover and brush meat with glaze and continue roasting until desired doneness.

Ingredients »

  • 1 lb. ground buffalo (bison) meat
  • 1 pouch Kraft STOVE TOP Stuffing Mix for Chicken
  • 1 can (10 oz.) fat free beef broth
  • 1 can (14 oz.) whole tomatoes with spices, chopped
  • 1 cup tomato juice
  • 1 medium green pepper, chopped
  • 1 medium onion, chopped
  • 1 egg
  • 2 cups Kraft Shredded Partly Skimmed Mozzarella Cheese (set aside)

Directions »

1. Preheat oven to 325 degrees. In large bowl mix all the ingredients, except for the mozzarella cheese, till just mixed.

2. Place meatloaf mixture in a 5 1/2x9 1/2 loaf pan or a 9x9 square pan.

3. Place in oven uncovered and cook for 45 to 55 minutes depending on your oven. Remove from oven in the last 5 minutes. Spread the cheese on top of the meatloaf; add more cheese if you like. Return to oven till cheese melts. Remove and serve with your favorite vegetables and potatoes or rice.

*Cooking time is very important as buffalo meat is very lean and cooks fast. Do not overcook. Use a timer if need be.

Slow Cooker Buffalo Brisket

Ingredients »

  • 1 tsp olive oil
  • 1 (3 lbs) buffalo brisket
  • 1 small onion, chopped
  • 2 tsp chopped garlic
  • 1 tsp dried basil
  • salt and pepper to taste
  • 2 c chicken broth
  • 1 c water

Directions »

1. Lightly coat the inside of a slow cooker with olive oil and place the brisket in the bottom of the cooker. Sprinkle in the onion, garlic, and basil; season with salt and pepper.

2. Pour the chicken broth and water. Cook on LOW, covered, until brisket is tender, 6-10 hrs, basting meat several times to moisten.
